Weeds become nutritious food, Udinus students turn Genjer into chips

Four students of Universitas Dian Nuswantoro (Udinus) have successfully transformed genjer plants, which are often considered weeds, into a crunchy snack called “G-Chips”. The product was showcased at the Udinus Entrepreneurship Unit 'Creanovative' event and can be ordered through Instagram 'gchips_'.

G-Chips are not only delicious but also healthy, good for the heart, digestion, blood circulation, and supporting diet programs. The team consisting of Muhammad Habib Abimanyu, Fadlia Lutfi Laili, Fadhwyrrahmandito Eddsel N, and Meyika Angga Adi N, utilized genjer which is found in Tuntang, Semarang Regency.

Manufacturing Process
The team leader, Muhammad Habib Abimanyu, explained that making G-Chips is quite challenging as the genjer has a high water and sap content. The process includes washing, pouring hot water to reduce sap, drying, and frying. The whole process takes about two hours, with drying to remove the water content for 15 minutes.

After many experiments, they managed to make chips that remained crispy without being too greasy.

Ingredients and Nutrition
According to Fadlia Lutfi Laili, the ingredients used include eggs, flour, salt, coriander, and turmeric to give it its distinctive flavor and color. G-Chips are also high in nutrients, including fiber that is good for digestion and nutrients for heart health.

Sustainability Mission
Habib emphasized that this innovation is also a solution to environmental sustainability by utilizing genjer that was previously discarded. Positive responses were received from various groups through trials and samples.

“G-Chips is our way of giving value to natural resources that are abundant but not yet optimally utilized,” Habib explains.
